Salad Inspiration
Wanted to point out another great post by Bitten for those of you looking for new salad combinations. Especially handy as we continue thru these dog days of summer. I highly recommend paying attention to the readers comments. Great ideas!
I tried one of these salads last night - super yummy! Tweaked some of Bittman's recommendations, but I imagine it turned out similarly. For anyone interested, try it as we did below :-)
Makes four servings
Ingredients: •¾ pound of tuna, seared rare •½ of a medium head of purple cabbage, chopped •½ of a medium jicama, Diced. Let marinate for 30 minutes in juice from ½ a lime and some salt •½ cup cilantro, diced •1 avocado, diced •Mix dressing to taste: Soy sauce, lime juice, mirin, fish sauce, red pepper flakes and sugar (if needed to cut saltiness of soy sauce)
Directions: Prep jicama first; let rest for 30 minutes. Chop remaining vegetables. Mix dressing. Sear tuna. Combine all ingredients, toss and serve.
